I love any excuse to have a party. More specifically, I love any excuse to cook, invite all my friends, and open some local beer and cider. Although I’m not the biggest football fan, the Super Bowl is a great excuse to bring everyone together.

I was planning what I’m going to serve: sweet pepper wings, 7-layer sauce, and meaty chili peppers and I started to think. There are two things I will never tire of at the Super Bowl parties: buffalo sauce and vegetables. My solution? I created this recipe for the addictive cauliflower bites of Sriracha Buffalo in the EatingWell test kitchen. They are a healthy and meatless alternative to the classic Buffalo chicken wings that even my vegetarian and gluten-free friends can eat.

Cauliflower is the best party veggie: it only has 29 calories per cup and is packed with vitamin C, vitamin K, folic acid and fiber. When you toast the flowers, they get nuts, browns and a little crunchy. In addition, it is an excellent carrier for the sauce, which I kept healthy by reducing the amount of spicy sauce and butter packed in sodium, adding lemon juice for flavor and sriracha for heat. You can eat these cauliflower snacks to get your keto buffalo cauliflower bites and vegetables at the same time.

Step 1
To make this snack easy, cut a head of cauliflower into florets, keeping them large enough for people to grab with their fingers, about 1 1/2 inches wide. Mix with a little extra virgin olive oil, then cover them over high heat until they are a little golden and crispy.

Step 2
While the cauliflower is roasted, you will mix the sauce in the same large bowl so that it does not get dirty. You probably already have all the ingredients in your kitchen: sriracha, hot sauce, butter, and lemon juice.

Step 3
Remove the hot roasted cauliflower from the oven and stir it with the sriracha-Buffalo sauce. Another quick flash in the oven makes it hot and cheeky, and bam! You have created a vegetable “wing” that even meat-eaters will keep coming back.

Serve these little beauties with carrots, celery, and creamy Buttermilk Ranch and Creamy Blue Cheese Dressing. (Make sure you have cocktail napkins or toothpicks, as these crazy babies can leave fingers that need a wipe or lick).
