Easy recipe with detailed explanation and of all the steps to follow to prepare some stuffed peppers with meat and cheese.
This year the spring allergy is giving me more can than usual and there are days that I don’t really want to go into the kitchen to prepare things that are too elaborate, but I still feel like eating well.
- Small peppers, 400 g
- Minced beef, 250 g
- Onion, ½
- Cheese, 100 g (*)
- Spices, to taste (*)
- Extra virgin olive oil, 1 tablespoon
The other day, while making the purchase, I found these baby peppers, which are not Padrón or Piquillo peppers, but are peppers like normal ones, but in a mini version, and I remembered that it took a lot of time without making these stuffed peppers of meat and cheese, which are made in half an hour and that is one of my star resources when I want to surprise someone who is on a diet, because if we do not exceed the amount of cheese, it is a low-fat dish that includes protein and complex carbohydrates
Preparation of Peppers stuffed with meat and cheese
We preheat the oven to 190ºC with heat up and down without fan.
Cut the half onion into very thin pieces. We go, we dry the peppers well and cut a strip along the pepper that will be where we are going to introduce the filling.
Finely chop the strips of pepper that we have cut and sauté in a pan over medium-high heat (8/12) along with the onion, extra virgin olive oil and a pinch of salt.
When the vegetables are tender, add the minced meat and season to taste. We cook it for a couple of minutes, only until it changes color because it will finish cooking in the oven.
Meanwhile, we spread the outside of the peppers with a few drops of extra virgin olive oil and place them on a baking sheet.
Fill the peppers with the mixture of minced meat and vegetables with the help of a teaspoon and compacting well, because if it is very loose it can be dry.
Bake for 15 minutes at 190 ° C and during that time we take the opportunity to cut the cheese into cubes.
After 15 minutes, we take the tray out of the oven, put some cheese dice on each pepper and bake another 5 minutes until the cheese melts.
We serve immediately, alone or sprinkle with some spices that we like.
These peppers stuffed with meat and cheese, as I said at the beginning, are perfect for when we try to follow a diet low in simple carbohydrates.
