The good thing about using zucchini noodles in recipes is that we can reduce the amount of calories in our dishes, we are also consuming more vegetables and something very important, they are so delicious that you will not miss the pasta. They work very well for people who avoid eating gluten or carbohydrates in excess and are ideal to get the youngest of the household to eat well.

Their preparation is very easy and they are ideal for when we are short of time. You can make them with a grater suitable for grating vegetables in julienne, a mandolin, or a peeler to make thin strips and then cut them with a knife in julienne cut. In our case, we use a spiralizer for vegetables that is special to achieve this type of cut.

In the Classic Big Skillet, we prepare some delicious scampi shrimp and serve them on the zucchini noodles. Scampi shrimp are nothing more than shrimp sautéed with garlic, butter or olive oil, lemon juice, herbs, and wine. You will have a lunch or dinner ready in less than half an hour!

This is what we need for two people:

3 fresh courgettes
1 pound (0.5 kg) of large shrimp
2 garlic, peeled and finely chopped
2 tablespoons of olive oil
1 tablespoon white wine vinegar
1 tablespoon of lemon juice
1 tablespoon chopped basil (or other herb)
Red pepper to taste
Salt to taste

We start by grating the zucchini. We separate. Meanwhile, preheat the Classic Big Skillet and place the olive oil, chopped garlic and red pepper, being very careful not to burn the garlic, as this can drastically change the flavor of the dish.
We pepper the shrimp and add them one by one to the pan. We let cook for two minutes on each side. Add the white wine vinegar and the lemon juice and mix well.

The zucchini noodles are cooked in the blink of an eye, so we add them last; mix well and let them cook for a minute nothing more. To finish our plate, add the chopped fresh basil. We serve and enjoy it.
